"Yahiko Musume" is a brand of edamame, a very early maturing variety grown in Yahiko-mura, Nishikanbara-gun, Niigata Prefecture. Seeds are sown in greenhouses in early February when it is still midwinter, and harvested from early May to early June. Please enjoy its bright green colour and smooth texture as zaru udon in summer and as nikomi udon in winter.
