Hon Mirin, which means real mirin, is a very important condiment for Japanese cuisine and has between about 12.5 and 13.5% alcohol.
This luxurious Hon Mirin is made with 100% domestically grown rice for peace of mind, with enhanced "richness and umami" by using two types of rice malt. The yellow koji rice usually used for hon mirin is replaced by white koji rice, which is rich in umami ingredients, increasing the umami content by approximately 20%.
